- • 3 cups oats
- • 1⁄2 cup Stevia (, Swerve or sweetener of choice)
- • 1 cup unsweetened almond or coconut milk
- • 3⁄4 cup half & half (, or just use more almond/coconut milk)
- • 2 eggs
- • 1 Tbsp. melted coconut oil
- • 2 tsp baking powder
- • 1⁄4 cup chopped pecans
- • 3⁄4 tsp salt
- • 2 tsp vanilla
- • 1 tsp cinnamon
- GLAZE
- • 6 Tbsp. Grass feed Cream Cheese (, Greek cream cheese, Greek yogurt or coconut cream (the options are endless for the glaze!))
- • 2 Tbsp. liquid vanilla Stevia
- • 1⁄4 tsp cinnamon (, or more to taste)
- • 2-3 Tbsp. unsweetened almond/coconut milk ((to thin out to desired thickness))
- 1. Preheat oven to 350 and grease a 9x13 pan with cooking spray.
- 2. Mix oats, pecans, baking powder, salt and cinnamon. Spread in bottom of pan.
- 3. Mix all other ingredients, except glaze, and pour over oat mixture.
- 4. Bake for 25-30 min, or until oats are set.
- 5. While oats are baking, mix glaze ingredients with mixer or food processor. Taste as you go to adjust sweetness to your liking and thickness.
- 6. Drizzle glaze over hot oatmeal!
