Amazing Baked Oatmeal

Ingredients
  • • 3 cups oats
  • • 1⁄2 cup Stevia (, Swerve or sweetener of choice)
  • • 1 cup unsweetened almond or coconut milk
  • • 3⁄4 cup half & half (, or just use more almond/coconut milk)
  • • 2 eggs
  • • 1 Tbsp. melted coconut oil
  • • 2 tsp baking powder
  • • 1⁄4 cup chopped pecans
  • • 3⁄4 tsp salt
  • • 2 tsp vanilla
  • • 1 tsp cinnamon
  • GLAZE
  • • 6 Tbsp. Grass feed Cream Cheese (, Greek cream cheese, Greek yogurt or coconut cream (the options are endless for the glaze!))
  • • 2 Tbsp. liquid vanilla Stevia
  • • 1⁄4 tsp cinnamon (, or more to taste)
  • • 2-3 Tbsp. unsweetened almond/coconut milk ((to thin out to desired thickness))
Instructions
  1. 1. Preheat oven to 350 and grease a 9x13 pan with cooking spray.
  2. 2. Mix oats, pecans, baking powder, salt and cinnamon. Spread in bottom of pan.
  3. 3. Mix all other ingredients, except glaze, and pour over oat mixture.
  4. 4. Bake for 25-30 min, or until oats are set.
  5. 5. While oats are baking, mix glaze ingredients with mixer or food processor. Taste as you go to adjust sweetness to your liking and thickness.
  6. 6. Drizzle glaze over hot oatmeal!
