Banana Nut Bread

Ingredients
  • Banana ((very ripe, mashed). 1/2 cup)
  • Whole eggs. 2
  • Greek Yogurt 1/4 cups
  • Rolled Oats 1/2 cups
  • Walnut meal 2 cups
  • Vanilla protein powder 2/3 cup
  • Baking soda. 1/4 tsp
  • Salt 1/8 tsp
  • Cinnamon 1/2 tsp
  • Olive oil spray
Instructions
  1. Preheat oven to 350*F. In a large bowl whisk the eggs, Greek yogurt and banana. In another bowl combine oats, walnut meal, protein powder, baking soda, salt and cinnamon. Stir until evenly mixed. Slowly add egg/banana mixer to dry ingredients. Lightly coat 9 by 9 inch baking pan with spray and then transfer mixture into pan. Bake 10-15 minutes (or until a toothpick comes out clean) Cool, and enjoy! Store in the fridge or freezer.
