Bacon, Cheddar, Crust less Quiche

Ingredients
  •  2 egg whites
  •  8 whole eggs
  •  1 cup cheddar cheese (, grated)
  •  Salt (, to taste)
  •  3 slices bacon
  •  1 green pepper chopped
  •  1 Medium onion
  •  1 cup steamed broccoli
  •  1-2 tsp Garlic (, to taste)
  •  Ground Pepper (, to taste)
  •  1 Tablespoon butter
Instructions
  1. 1.Preheat oven to 450°F.
  2. 2. Crack the eggs, one at a time, over a small bowl.
  3. 3. Using a whisk, beat the eggs until the yolks and whites are thoroughly combined.
  4. 4. Grate the cheese while you cook the strips of bacon.
  5. 5. Once the bacon cools, crumble the strips.
  6. 6. In a medium cast-iron or nonstick ovenproof skillet, heat the butter over medium heat.
  7. 7. Saute chopped onions and peppers
  8. 8. Add egg mixture to the skillet. Sprinkle the bacon crumbles evenly over the eggs.
  9. 9. Bake for about 20 minutes.
  10. 10. Sprinkle the remaining cheese on top of the egg mixture. Bake for anther 10-15 minutes or until it is firm in the center and cheese is browned.
