Banana Nut Bread

This version is healthier than the normal banana nut bread. Made with less fat and crabs. This bread is also higher in protein. You can sub cottage cheese instead of Greek yogurt.

Ingredients
Banana
(very ripe, mashed. 1/2 cup)
Whole eggs. 2
Greek Yogurt 1/4 cups
Rolled Oats 1/2 cups
Walnut meal 2 cups
Vanilla protein powder 2/3 cup
Baking soda. 1/4 tsp
Salt 1/8 tsp
Cinnamon 1/2 tsp
Olive oil spray

Instructions
Preheat oven to 350*F.
In a large bowl whisk the eggs, Greek yogurt and banana.
In another bowl combine oats, walnut meal, protein powder, baking soda, salt and cinnamon.
Stir until evenly mixed. Slowly add egg/banana mixer to dry ingredients.
Lightly coat 9 by 9 inch baking pan with spray and then transfer mixture into pan.
Bake 10-15 minutes (or until a toothpick comes out clean)
Cool, and enjoy!
Store in the fridge or freezer.
