Pumpkin Energy Bites

Fall is here!! Can you believe it?  I love this time of year with all of the beautiful trees changing colors. The crisp feeling in the air. I start thinking about warmer clothes, legging and boot!! Yes please!  Halloween and delicious pumpkin spice treats. What is your favorite part of Fall?

Here is a my delicious healthy recipe for pumpkin energy bites. Taste of fall with a boost of energy we can all use. Right?

Pumpkin Energy Bites

Pumpkin Energy Bites

Prep Time: 10 minutes

Yield: About 25 1-inch balls

Delicious and healthy energy bites.

Ingredients

  • 8 oz. (about 1 packed cup) chopped hazelnut
  • 1/4 cup Agave or honey
  • 1/4 cup pumpkin puree
  • 1 Tbsp. flax seeds
  • 1/2 cups Vanilla Chai Protein Powder (or vanilla protein powder)
  • 1 tsp. ground cinnamon
  • 1/2 tsp. ground ginger
  • 1/4 tsp. ground nutmeg
  • pinch of salt
  • 1 cup old-fashioned oats (dry, not cooked)
  • 1 cup toasted coconut flakes
  • 1 cup toasted pumpkin seeds

Method

Combine the hazelnuts, toasted pumpkin seeds, agave or honey, pumpkin puree, flax seeds, Vanilla Chai, cinnamon, ginger, nutmeg and salt in a food processor, and pulse until smooth and combined.

Transfer the mixture to a large bowl, and stir in the oats, coconut flakes until evenly combined. Cover and refrigerate for at least 30 minutes.

Once the mixture is cool (and easier to work with), use a spoon or cookie scoop to shape it into your desired size of energy balls. Alternately, you can line a small baking pan with parchment paper, and press the mixture evenly into the pan, let it cool, and then cut into bars.

Store covered in the refrigerator for up to 2 weeks.

NOTE: If you don’t have Vanilla Chia protein powder you can just use vanilla and just add cloves.
