Ingredients
  

  • 3 cups oats2 teaspoons baking powder1/2 teaspoon baking soda1/4 teaspoon salt1 1/4 teaspoon cinnamon1/8 teaspoon nutmeg1 scoop vanilla protein1 cup canned pumpkin2 teaspoons vanilla extract1/2 cup unsweetened applesauce1/2 cup coconut sugar or stevia 1 TBSP coconut oil1/3 cup Cacao chocolate chips

Instructions
 

  • ✔ Preheat oven to 350 degrees F. Spray cookie sheet with nonstick cooking spray.✔ Make oat flour by throwing your oatmeal into blender or food processor until oatmeal resembles flour.✔ Place protein powder, oat flour, baking powder, baking soda, salt and spices in a medium bowl to set aside.✔ In a separate large bowl, whisk together pumpkin, just like brown sugar substitute, vanilla extract, oil, and applesauce for 1-2 minutes until everything is s smooth and creamy. Slowly add in oat flour mixture and mix until just combined.✔ Add chocolate chips. Bake for 10-15 minutes (check often to make sure they don’t burn!) Once finished baking, cool 10 minutes to allow them to set up!
