InstaPot Pomegranate Pulled Pork

I am always trying to find quick and easy recipes to make for my family. Pulled Pork has been a favorite of mine to make but I don’t always have time to make it since it takes time to cook. But then for Christmas, I received an Instant Pot and hello time savor!!
I made this pulled pork in just over an hour! We didn’t have any meat left over. Which is a bit of a bummer, my Husband and I would have had it for lunch the next day.
Instant Pot Pomegranate Pulled Pork
This easy to prepare Pomegranate Pulled Pork can be made in the Instant Pot in under an hour. It is so tender and juicy your whole family will love it.
Ingredients
- 2 tablespoons avocado oil
- 1 large sliced onion
- 1/4 teaspoon salt
- 2 tablespoons garlic
- salt and pepper to season roast
- 5 to 6-pound pork roast
- 2 cups Pom Wonderful 100% Pomegranate Juice -marinade
- 1-2 cups Pom Wonderful 100% Pomegranate Juice- for InstantPot
- 1/2 Fresh Pomegranate
Directions
Thow a 5-6-pound pork roast.
Marinate:
- Put pork roast into a glass container or ziplock bag.
- Pour 2 cups Pom Wonderful 100% Pomegranate Juice over pork roast in a ziplock bag or glass container.
- Add salt, pepper, garlic, and place in the fridge for an hour up to 24 hours.
Instructions:
- After the roast is done marinating set the Instant Pot to saute.
- Add 2 tablespoons of avocado oil to the pot. Heat oil until it is hot.
- Add sliced onion, garlic, and a pinch of salt.
- Saute until the onions are almost translucent.
- Saute roast on all sides until it just begins to brown.
- Add the Pom Wonderful 100% Pomegranate Juice place the lid on the Instant Pot.
- Pressure cook for 55 minutes in the manual setting.
- Once the roast has finished cooking you can perform a quick release.
- Remove roast place on a serving dish.
- Take a fork and gently pull the pork apart.
- Add 1/2 pomegranate seeds on top.
Serve and Enjoy!
Slow cooker directions
In a large skillet add 2 tablespoons of avocado oil. Heat pan over medium heat. Add sliced onion, garlic, and a pinch of salt, saute onions until they are translucent. Move onions and garlic to the slow cooker. Season roast with salt and pepper, saute roast on all sides until brown. Transfer the roast to the slow cooker.
Add Pom Wonderful 100% Pomegranate Juice to the slow cooker. Cook on low for 4 to 6 hours. Use a thermometer to verify pork is fully cooked. Pork should reach 145 degrees before consuming.
Adding pomegranates to your diet has some great health benefits.
• Memory & Cognition
– In a preliminary 2013 UCLA study, it was found that a small group of older adults with age-related
memory complaints who drank 8 oz. of pomegranate juice daily had increased verbal memory performance and functional brain activity in fMRI testing after just four weeks.
*These early scientific results on the impact of pomegranate juice on the brain have not yet been adequately studied. Further clinical research on larger populations is needed to help establish causation and to determine the long-term effects of pomegranate on memory and cognition.
• Post-Workout
– 100% pomegranate juice is powered by unique polyphenols that early research suggests have promising results for post-workout muscle strength recovery. Certain types of polyphenol antioxidants, like those found in pomegranate juice, may help increase nitric oxide bioavailability by protecting it from breaking down in the body. Nitric oxide helps your body get the oxygen and nutrients it needs during exercise.
*Although the research reported is promising, additional clinical research is needed to establish causation and the potential impact of pomegranate polyphenols and exercise.
