These energy peanut butter protein balls are my take on the tradition Peanut Butter Blossom Cookie. I don’t just make these protein balls just around Christmas time, I make them for parties or for a quick grab and go snack. I have made these for my bunko group, Christmas party, school parties and they are a big hit.
Energizing Peanut Butter Protein Balls
Paleo, Gluten-Free, Vegan
Makes 48 cookies
1 Cup Peanut Butter, Almond Butter, or Seed Butter
2/3 cup raw honey or agave
2 tsp. vanilla
1/2 cup flax meal
2 cups oats (use Gluten Free oats if needed)
1 cup Vanilla Protein Powder
48 large Dark Cacao Chocolate chips
OTHER OPTIONS:
¼ mini chocolate chips
Raisin
Energizing Peanut Butter Protein Balls
Paleo, Gluten-Free, Vegan Makes 48 cookies
- Yield: 48 cookies 1x

Ingredients
- 1 cup Peanut Butter (Almond Butter, or Seed Butter)
- 2/3 cup raw honey or agave
- 2 tsp. vanilla
- 1/2 cup flax meal
- 2 cups oats (use Gluten Free oats if needed)
- 1 cup Vanilla Protein Powder
- 48 large Dark Cacao Chocolate chips
OTHER OPTIONS:
- 1/4 mini chocolate chips
- Raisin
Notes
Mix all ingredients in a large mixing bowl. Roll into 1 inch balls. Press down on a plate or cookie sheet until slightly flattened. Press a large, dark chocolate chip into the middle of each cookie. Refrigerate or keep at room temperature.
**If you are adding mini chocolate chips vs. large chips then mix chips in the mix before rolling. This takes 5 minutes or less to mix; 5-10 minutes to roll into balls.
