Chicken Bacon Ranch Casserole

Bacon and ranch – flavors that adults and kids will both love! This is so delicious and only 2.5g carbs! It’s the perfect healthy weeknight dinner that everyone will love – and it even freezes well, too!

Servings: 6

Ingredients:

  • 3 chicken breast washed, dried, and chopped
  • 2 tablespoons of olive oil 
  • 1 tablespoon of paprika
  • ½ teaspoon of salt 
  • ¼ teaspoon of pepper
  • 8 ounces of Cream cheese softened
  • ½ tablespoons of dried parsley 
  • ½ tablespoons of Garlic Powder
  • ½ tablespoons of Onion Powder
  • 1 cup fiesta blend or any shredded cheese
  • 8 to 10 bacon strips cooked and chopped

Directions:

  1. Preheat oven to 375.
  2. Wash and dry the chicken.
  3. Toss in the olive oil then seasons with paprika.
  4. Lay in a baking dish.
  5. Melt cream cheese and the remaining spices.
  6. Cook bacon and add half to the cream mixture.
  7. Spread on top of layered chicken.
  8. Sprinkle cheese and then the rest of the bacon.
  9. Bake for 35 to 45 minutes.
